Previously, bakers would never sell a semla, a kind of cream and marzipan filled bun, before Lent had begun, and no-one ate crayfish or surstr�mming, the fermented herring of the north, before their official summertime premieres. Glogg and saffron-laced Lucia buns were enjoyed only in December, in conjunction with Christmas and Santa Lucia Day. With the forward march of commerce and internationalization, these rules have been relaxed somewhat, but Swedes continue to take their traditions very seriously indeed.
