Happy eating in Stockholm

Stockholm has made its entry on the world gastronomic stage and will soon be as well known for its restaurants as for pop music and telephones. Dining out in Stockholm these days is not to be missed - and the milieus are as gorgeous as the food.

From gastronomic wasteland to a prime destination for culinary pilgrimages � in the last 20 years, Stockholm has become one of the most intriguing food cities in the world. In terms of style, the origins of many of the hottest restaurants in Sweden�s capital can be traced to a tradition developed in the last decade and designated Eurofusion. The style is a balanced mix of the best of France, Italy and Spain, coupled with Scandinavian tradition - and spiced with influences from the Middle East, Asia and the United States.

After a couple of years of trend-sensitive hunting for inspiration among all the world�s cuisines, Swedish chefs have begun looking towards home. And one can certainly understand why. Swedish ingredients are superb: cold, pure water in the lakes and the seas produce first-quality fish and shellfish. Vegetables, berries, mushroom and fruit ripen slowly in the cool climate, giving them a concentrated flavor found nowhere else. Traditional Swedish herbs, such as dill, have also experienced a renaissance, along with old methods such as pickling - sugar-curing - raw ingredients.

However, the food and wine are not the only things bringing people into Stockholm restaurants. Exploring the design of the restaurant space is worth a visit in itself. The magnificent dining rooms of Operak�llaren and Grands Franska make them two of the world�s most beautiful restaurants according to many � not least due to the extraordinary view over Str�mmen and the Royal Palace. These sumptuous milieus stand in stark contrast to the Scandinavian blonde and ascetic interiors that otherwise prevail in Stockholm. Sturehof, whose interior was designed by Jonas Bohlin, is a superb example of this Swedish modernism.

Still, the most important thing about the Stockholm restaurant scene may be its ability to combine gastronomic tours de force with charming people in an informal and lively social scene. In recent years, a couple of 20-something creators have opened restaurants where equal importance is given to the three components of food, people and milieu. Most of these up-and-coming celebrity restaurateurs have opened their doors just outside the city center. These are places where the straightforward philosophy is that people should have a great time while enjoying a fabulous meal. We hope you take advantage of the opportunity while you�re in Stockholm.
